Today I have a very delicious cake to share with you, that I bake quite regularly and is a firm favourite with my daughter! So much so that she asked for this cake for her birthday last year. The cake is a Chocolate and Banana cake, it can be made in either two 7" tins and then sandwiched together or you can split the mixture between two 1lb loaf tins.
I scrapped a very girly layout with the photo of the cake, seeing as it was made to celebrate a very girly birthday!!
And here is the recipe:-
100g Plain Chocolate
150g Softened butter
175g Caster Sugar
3 Eggs, beaten
175g Self Raising Flour
1 level teaspoon Baking Powder
25g Cocoa Powder
2 large bananas, peeled and mashed
- Heat the oven to 180 or Gas 4
- Butter and line either two loaf tins or two 7" round tins
- Melt the chocolate in a small glass bowl over a pan of barely simmering water, stir until smooth and then remove from the heat
- Cream together the softened butter and caster sugar until pale and fluffy
- Gradually add the egg, beating well between each addition
- Sift together the flour, baking powder and cocoa powder, fold in using a large metal spoon
- Add the mashed banana and melted chocolate and mix well
- Divide the mixture between the two tin
- Bake for about 45 minutes or until a skewer insterted in the middle comes out clean
- Cool on a rack
- If you've made your cake in two 7" tins, make chocolate buttercream to sandwich them together.
